In just 12 months, the hotel cut food waste per cover by 13% and rescued over 9,200kg of surplus food, proving that elite luxury and environmental responsibility are a winning combination.
The Sheraton Grand fostered a “holistic culture” by empowering staff to innovate, such as repurposing bread trimmings into crackers and citrus peels into bar cordials. By combining seasonal Scottish sourcing with rigorous staff training, the hotel has embedded waste reduction into its daily DNA, creating a progressive environment for both chefs and guests.
