Following our successful kick-off last week, the momentum for AC Batch 13 continues to build. On February 4th, our cohort moved from the “why” into the “how,” moving deeper into the technical heart of the Accredited Food Waste Consultant (AC) program

The AC program is more than just a training course; it is a professional traineeship designed to equip the next generation of experts with the tools, credibility, and UN-awarded methodology developed by Lightblue over the last 13 years. By becoming an Accredited Consultant, these professionals gain the expertise to lead businesses through The PLEDGE on Food Waste certification, implement the FIT Food Waste Tech, and many more. 

Mastering the Methodology of The PLEDGE

This week’s session was a specialized deep dive into the philosophy and criteria of The PLEDGE on Food Waste. To successfully guide a business toward sustainability, a consultant must first master the underlying framework that drives change. 

Key speaker Marco Sandri, Global Manager of The PLEDGE on Food Waste, joined our Course Coordinator Teeka Teeka-uttamakorn to walk the cohort through the project’s core philosophy. The session focused on a Process-Based, Long-Term, and Holistic Approach to food waste. 

Participants learned that true impact requires a complete Mindset Change, shifting away from reactive waste management toward a proactive methodology aimed at zero food waste to landfill. We explored the technical criteria illustrated with real-world examples, providing the cohort with the practical tips needed to drive meaningful change in complex restaurant and hospitality environments.

Looking Ahead to Module 3: Food Waste Monitoring System

Next week, we transition from framework to functionality. In Module 3, the cohort will focus on Food Waste Monitoring Systems. 

The session will cover how to set up and run the FIT system directly in kitchens. This is where the data meets the dirt, tracking performance, identifying waste patterns, and unlocking access to Lightblue’s KPI tools and over 50 proven waste-cutting strategies. We look forward to seeing how the batch applies their theoretical knowledge to these powerful technical tools.
