55 Marriott Hotels in UK, Ireland & Nordics Achieve The PLEDGE on Food Waste Certification

Deploying systematic commercial food waste monitoring allows multinational hospitality brands to lower kitchen overheads while driving ambitious corporate sustainability goals. In September 2023, Marriott International UKIN set a highly ambitious goal. Specifically, they wanted to have all 55 of their managed hotels certified by The PLEDGE on Food Waste. To achieve this, over 120 hospitality professionals attended deep preparation sessions. This group included Executive Chefs, Directors of F&B, and Hotel Managers.

LightBlue led a comprehensive two-day workshop in Edinburgh to prepare the teams. During these sessions, coaches equipped attendees with practical knowledge and specialized tools. Consequently, the teams learned how to implement and achieve this demanding certification. They also learned how to track daily kitchen loss using the advanced Winnow system.

Strategic Blueprints for Commercial Food Waste Monitoring

Adopting a holistic approach, the properties first built internal food lovers’ committees. Then, they implemented new operational practices following the 95 criteria of the standard.

Specifically, their shared strategy included these core actions:

  • Policy Design: The properties crafted a formal food waste policy and shared it with all key stakeholders.
  • Employee Training: The managers trained employees and raised daily awareness across multiple corporate touchpoints.
  • Data Analysis: The kitchens captured data through consistent commercial food waste monitoring.
  • SOP Reinforcement: The teams embedded new standard operating procedures at critical waste generation points. These areas included receiving, storage, and menu forecasting.
  • Guest Nudging: The front-of-house staff engaged directly with diners to nudge them away from plate waste.
  • Landfill Diversion: The procurement teams explored existing waste management solutions to divert remaining organic scraps.

Verifying Compliance and Earning Gold Status

Next, the 55 hotels went through strict third-party audits to verify their compliance. SGS UK and Audit Diagnostic Solutions Tourism conducted these independent reviews.

The final audit results revealed exceptional operational dedication across the entire region. Notably, 53 hotels obtained Gold certification against the 95 criteria. Meanwhile, the remaining two hotels secured Silver status.

This collective effort resulted in a remarkable 25% reduction in food waste per cover. For context, this reduction equates to saving more than 215,900 individual meals. It also means the teams avoided 415 tons of carbon emissions. Furthermore, the culinary teams added 121 creative zero-waste dishes to their permanent menus.

Setting a Global Standard for Multi-Property Brands
