Food Waste Prevention in Mauritius – Destination Project

Implementing systematic hotel food waste monitoring allows island destinations to lower commercial costs while protecting fragile coastal ecosystems from landfill pollution. In line with the Paris Climate Agreement, Business Mauritius recently launched an ambitious food waste prevention program. This island-wide collaboration is made possible thanks to the Living Labs Federation. Specifically, the initiative receives critical financial backing from the Human Resource Development Council.

Ten prominent pilot sites are embarking on a structured six-month journey to cut kitchen waste. Ultimately, their goal is to reach the international certification standard known as The PLEDGE on Food Waste.

Advanced Technology for Hotel Food Waste Monitoring

The participating pilots include the Mauritius Commercial Bank alongside nine leading luxury resorts on the island. Each site will receive comprehensive technical training to implement an advanced hotel food waste monitoring system.

To achieve this, the commercial kitchens are deploying LightBlue’s specialized FIT technology. This digital tool tracks food waste points in real time.

Furthermore, employees are learning the 95 specific criteria required to achieve bronze, silver, or gold certification levels. This tracking system guides the resorts toward a strict zero food waste to landfill target. To maximize success, a dedicated accredited consultant supports each business throughout the process.

Specifically, the program focuses on several key resort participants:

  • Constance Belle Mare Plage: Upgrading large buffet tracking systems to minimize daily pre-consumer prep loss.
  • Preskil Island Resort: Training culinary teams to monitor plate waste across multiple beachside outlets.
  • Beachcomber and La Pirogue: Implementing strict weight tracking to optimize high-volume banqueting prep.
  • LUX Resorts and Heritage Awali: Integrating structural data analysis to adjust weekly food purchasing schedules.

Driving a Circular Economy Through Collaboration

“This program is part of our sustainable development pact called SigneNatir,” says Mickaël Apaya of Business Mauritius. “We believe this creates an opportunity to engage our strong hospitality industry. Furthermore, it ignites the appetite of diners who increasingly expect responsible gastronomy. Our goal is to become a case study for other destinations.”

Renowned local food rescue organization FoodWise is deeply involved in the project as well. After receiving extensive technical training, three FoodWise team members officially became accredited consultants. Consequently, they can now prepare broader adoption of the standard across the entire island ecosystem.

To motivate participants, the best performers will receive official recognition during a holiday closing ceremony. Awards will highlight the highest certification scores, the biggest waste reductions, and successful landfill diversion.
